Sounds like you need a dehumidifier and/or a constant source of low heat to keep it dry. First I would repair the skylights as this is probably the source of the humidity, or have them removed which will require new roof decking, tar paper, caulk and shingles. Check the caulking on all your windows and repair if needed. This should be yearly maintenance.
I would think about putting the window film on your windows for the winter to keep out the condensation that forms on the windows and will help keep some of the warmth in from the sun in the windows.
only a building contractor can answer that question for your specific location & more importantly what the previous builder did to cause the irresponsible condensation in the first place.
The other 2 comments are very dangerous, especially the plastic. The condensation is moisture in the house trying to get out: from showering, boiling foods, people talking even. Without fixing the problem you could be incurring very expensive structural repairdamage in the future.
Kae, if you can, open up the sun room, now while we have nice weather. Then let this area, air out. In a few weeks, or when you choose, you can begin to close it up for winter. In the spring, do open both ends, and at least one side, to allow the air to move and clear out any condensation. The area, needs air, just as we do. I am not familiar with Skylines, for these are usually installed thru the roof, so do ask someone more familiar with this area. Best wishes, J.

Yes, replace with Plastic. Have the roof insulated, or use Thermal Blinds. Also use damp condensation collectors full of salt or damp retaining cristal - containers available very cheaply.
