I would donate them to an art teacher or art center
If you like a farm house like design like I do, I would use the for curtains. A simple rod and cafe rings to hold the waist line of the aprons would give you a unique look and recycling is always the best.

All good ideas...How about A "quilted" tablecloth or runner without the batting, frame parts of them and make a gallery wall.
vintage aprons have a real financial value. I would sell them rather than repurpose them.
