Kitchen cabinet doors don't stay shut all the way..open about an inch
The kitchen cabinet doors open about a inch. How do I fix the hinge to hold them shut?

Try cleaning them. Dust and the humidity in the air can gunk them up. If that doesn't work, replace the hinges. The self closing feature has worn out and you will need to replace them.
After 15 years they've probably had a few coats of paint. They may need to be cut down just a little or the latches may be worn out and need replacing.
The spring mechanism in cabinet hinges wears down over time. Replacing the hinges is usually the solution. You can also install magnetic catches to hold the doors closed.
You have to adjust the hinges so that they will close.... It may be that they are out of adjustment so that the weight of the door leans away from the cabinet. I wish I could tell you exactly what to do, but the adjustment is in the hinge, either on the door part, or the face part of the cabinet....
What type of hinges do you have? Could just be a simple adjustment.
It sounds like your hinges may have sprung or are worn out. Changing them should help to alleviate this problem.
