Old wive's tale is to trim your roses at Valentine's Day because that day is usually after the last frost. Don't trim now. They'll try to sprout new growth that will die in winter and can cause other damage to the original canes. If you are in a very frigid climate, mulch heavily.
I usually wait to trim roses till spring. Only trim what doesn't sprout. No fear of freeze off. I will also trim back to shape them too. I had over 20 different roses in MA and they flowered beautifully all summer.
Wait until they have been it by frost at least once then cut back 1/3 to 1/2 the plant. be sure to clean out some of the inner growth so air can pass through. That will help the plant keep mildew down.
