Depending on where it is on the counter, you could cover the spot by gluing or screwing a wooden cutting board on top.
Paint it! Melamine paint. Inexpensive and looks great.
Rustoleum or contact paper if you're really in a pinch for money. Just try not to let the seams be where any water might accumulate. Is it just the one spot that is making you so unhappy? Someone suggested a cutting board screwed or glued over the bad spot. Fantastic idea! How about a marble slab? They won't always stay shiny and new but they're fantastic for setting something hot on, slicing, dicing.
I used granite looking contact paper and then applied 2 layers of clear gloss polyurethan.
Sand them and paint them. You can paint just about anything.
If it is a stain, try using Bar Keepers Friend , (found in by the comet) that stuff works like magic!
