Copper pipe is the best in my opinion, but in some instances pvc has its uses. If you are joining copper to copper you need to solder the two pieces together.

There are 'connectors' that will work with copper and flex pipe. Make sure the main water valve is shut off first. You'll need to know the transition sizes. Ask a certified plumber for professional instructions. Best of luck.

Stay with copper. I agree with Marty. Best to call a plumber to have it done right. You don't want any leaks. You don't want any reduction of flow. You don't want to use the wrong type of pipe or connectors for the application. You also have grounding cables for your electrical circuit box connected to the pipes. Mixing different pipes can eliminate/prevent the ground. This would be dangerous.
