They sell all kinds of racks just for this purpose. Home improvement stores, Bed, Bath & Beyond, kitchen specialty shops. Or if you have room just store flat and stack.
Put up dividers on the shelf. You can make then different widths to standup different types and sizes of cookie sheets, cake pans, racks, etc. You can make it so everything is separate or put together things that will fit together, like cookie sheets, cooling racks, etc. This will allow you to put more on the shelf than just that stuff, perhaps large pasta pots, or slow cookers, etc.

Put them vertical on the shelves
I use a wire file divider...like you would sit on your desk to hold files. Just slide it into your cabinet and slide the pans into the various slots. Works great.
