Yes, paint is a quick fix but it's hard to go back if you decide you don't like the paint.
One way to update paneling is to paint it. You can fill in the "stripes" first if desired (use spackle or joint compound) or leave them as is to give a beadboard appearance.
We updated our paneling by painting it and adding a border at the top. It was warped and cheap and the painting completely concealed it when we sponge painted 3 colors. No matter what you paint to finish, start with calking between the panels, then paint with Kilz aroma free primer. Then paint it and add a top border if you wish!
We painted ours on a home we had and it looked great!
