Yes. The water heater should be on a separate circuit breaker. It should be no problem.
Not only you should shut water heater off (gas or electric) on the tank & shut water off going to it. Just make a note to your self that its off.
Do not turn it off in the cold weather, why tempt freezing which can result in a ruptured tank with water damage and cost of replacement. Leaving it on cost so little compared to possible large cost of freezing.
I have a gas one at my 4-season cottage, and I only put it on vacation mode. I have been told by many heating experts and plumbers to leave the gas/pilot light on to prevent problems with spiders. I have had to repair a FP, and replace a wall heater, because I didn't heed the warning.
