I saw once and don't remember where, an advertisement for silicone covers you could slip onto pots and pans that get real hot. My biggest complaint is the handles on lids that have the silicone on them, but don't totally cover the handle, I am always hitting the hot edge of the handle with the side of my hand and my hand is small!
Put some pot holders on the handles and lids handles. They are made to fit right over the handles, kind of like the finger of a glove.
While investing in silicone pot handles is a great idea, I have a few questions. First, what type of cookware are you using? Next, electric or gas? Lastly, how are you placing the pots on the stove?

Buy a pan with cool handles, my Red Copper fry pan has one, its great.
Cool handles are great! Invest in some hot pads or a hot pad glove.
The square potholders make good pot handle covers. Buy the kind with Teflon bottoms. Sew them together on opposite edges to form a rectangular tube, with the Teflon inside. Make a habit to slide one on each handle before you put the pot or pan on the stove. They wash along with dish towels. Maybe these will protect your skin from burns and steam. And never turn the eye or flame on high. ☺️
Could you just dip the handles in a can of flex seal? Don't know what temps are recommended for it but is does handle outside temps on hot roofs.
they make rubber handles that slip on...I have one for my cast iron fry pan. It slips on overtop easy and back in my drawer with my hot pads when not using.
