A curtain valcroed around the sink.....valcro on the curtain and valcro on the sink......or have a carpenter build you an open-in-the-back box to put under your sink.
You can use fabric and hot glue to make a ruffled "skirt" along the bottom edge of the sink. Make it as long as you want!

Sticky back velcro around the sides of the sink. I recommend using the soft side of the velcro on the sink. Sew on velcro on upholstery fabric to make the skirt. Have skit stop just shy of the floor so it doesn't wick spilled or splashed water. If you don't sew, you can use fabric glue to attach the velcro to the upholstery fabric and to glue down the edges like hems. I suggest upholstery fabric because it is heavier and will hang pretty straight and look a little less like you're just trying to hide stuff. You can get remnants pretty cheap and change it out when you get tired of a look. And you can use plastic drawers under the sink (most will pull apart so you can make them shorter) and they will be hidden by the sink skirt.
