Curtains. You can hang in so many ways and there are so many styles out there. Just make sure they are long enough to reach from the ceiling to the floor. Also can be used for privacy as well, if you have shelves that are being used for storage. Good luck and hope this helps?
Fix up Paneling or turn wall into a wall of shelves.
I would be inclined to do something like shiplap. DO make sure you cure your boards for several weeks in your home before putting on the wall to prevent bowing from humidity changes.

I bought exterior log siding boards and covered my computer room. Now it looks like a log cabin and I love it!
I have same problem, just read a youtube video about a guy who used laminate flooring on the wall. Just stagger boards, stappled or glued in place. I might try that myself.
Paneling, self-stick tiles, self-sticking bricks or flooring might be just the ticket to cover it up. https://www.wikihow.com/Cover-Up-a-Bad-Wall
Use textured paint. Valspar makes one called Sandstone that has flecks of sand in it that makes the finish look and feel like stucco. For interior walls - it is awesome and easy to apply.
