Well, it's a difficult job to cover a popcorn ceiling with anything, that won't make it look uneven. You should have it removed. Easiest diy way is to make sure you saturate the ceiling with a sprayer filled with water. Once the popcorn has become soggy and gross, get the largest putty knife you can find and start scraping. By wetting it, you get less dust and it comes off cleaner and easier. Just don't forget to cover any furniture or flooring under it. Doesn't have to be perfect, but the bead board will look and go up straighter and easier. Good luck.
