I wallpapered my ceiling. Got paintable wallpaper in a tin ceiling design. It takes work, because it is overhead, but I cut wallpaper in sections with 4 "tiles in each section. I left it white but you can paint it. Small sections at a time because being overhead is harder than the wall. Search for wallpaper ceiling ideas. My friend said she was going to put her wallpaper on foam board and put it up that way. Any easier way, which I'm going to use in my small guest room is get the thumbtacks that come on a roll of leather or fabric, like a ribbon with tacks, grid out a design and apply tacks and viola, cheap, easy and unique. white washed shiplap is current but bamboo is beachy and cheap
How much work do you want to do? If you are a DIYer, collect a ton of pallets if you can find them (free is good if available), break down to the boards, whitewash them and install on your ceiling. Instant beachy look. I like the natural look of the beam. If you like it, leave it! You're the one who's living there, not whoever suggested you PAINT it, ugh! For curtain rod, plumbing pipe - cheap and you can get cut to size. Link shows DIY example. I agree with Mocrenn with the beadboard idea. Beadboard design comes in all kinds of widths, so for your large vaulted ceiling, I would choose a wider spaced bead. The sheets usually come in standard 4ft x 8ft sheet panels, so fairly easy install without having to separately install tongue and groove planks.
Idea in attached photo. Although more work and cost, the added beams in the vaulted ceiling would be a beautiful addition too. One bonus to doing this, is that there would be fewer visible seams in the beadboard panels, because the beams could be spaced at the right widths to mask the seams.

I love the look of beadboard, too. My grandmother's house had it on the sun porch, and it was lovely. I also saw a ceiling (on a home show) done in shiplap, but that would be a lot more work than beadboard panels.
The wallpaper is applied just like wallpaper on the wall, suggest sections as overhead is harder than the wall. See pix
You can paint lines on the ceiling to create a paneled look.
Drape an old fishing net across or around the ceiling, or Trellis or Netlon! (Plastic square net type fencing)
