You can easily do any herbs, lettuce, green onions, a cherry tomato bush, and even celery cut from the end of the celery you buy at the grocery store! Just cut it off and set it in a bowl of water, change water every 2 days.
Make sure you get a grow light and set them under that. Lettuce, onions and tomatoes need lots of light.

Leaf lettuce works pretty well with a grow light.
You should be able to grow cherry tomatoes or yellow pear tomatoes in a pot, also lettuces and spinach. And don´t forget about alfalfa and other sprouts, very healthy and you can grow them anywhere.
You need a lot of light to grow anything indoors and veggies like lots of light. Try lettuce (mesculin) which is nice for sandwiches and salads; green onions and herbs.
A Hydroponic system might be the way to go..dirtless. You tube has a video on how to make a 6 cell system from a plastic tote. Regaurdless of methode you will need light for the plants...grow typ do best, second is a compact fluorescent...both need to say daylight.
