Use training stretch tie or velcro tape found in most garden centers
There are hooks that will work on the iron fence, check with your hardware store. I'm having trouble, however, with espaliering plant against the iron. What about your daytime temperatures?
get some “garden flexible tie”. Comes in 12’ or so lengths. It’s like twist-ties, but covered in faux rubber. Easy to cut and shape, and it’s green.
I used a medium thickness electric wire that was coated as the ties on aa climbing rhododendron that I wanted to splay. It worked really well and the branches were not damaged by the wire.
