What’s the best way to cover or remove Z-brick?

I have Z-brick on my walls in the kitchen. My husband has painted over it with white paint. I’d like to remove it, especially under the cabinets.

It's going to be tough to get it off without destroying the sheet rock underneath--probably almost impossible. You may have to cut out whole sections of sheetrock with Z-brick attached and repair the sheetrock.
