I would try to match it to what you have in the kitchen as it will look more cohesive.
you can blend floors, there are no set rules, use what you like
If you have a definite ‘doorway’ between the kitchen and mud room you can have different flooring materials...I would try for complimentary colours though
There's no way you will be able to match it, even if they still make that exact tile, the dye lots would be different. I ideal situation is to have it match. So if redoing your kitchen floor is not an option (which would be a major job in it self), I would say you'll have to do a coordinating tile. You could try one that looks like hardwood.
