Any light color. White! Also, declutter your counters for a larger look
Part of the problem isn't the paint color but the clutter. The more things you can store out of sight will really open up th kitchen.
White or some other light color.
Paint your cabinets a cream color and brighten up the back splash and the sofit with a pretty soft color. I did my back splash in tile, and the sofit and walls in Mulling spice By Behr.

I have to agree with Connie that reducing the amount of stuff stored on your counters will go a long way toward making the kitchen feel bigger.

I would paint my cabinets a very light gray and find a place for all the things on the counter. I believe the darkness is coming mainly from the cabinets.
Paint everything white, moulding, cabinets, base cabinets, island and as a decoupage artist, I hate to say it, but the birds too, should go. Don't worry about the clutter, that comes and goes. Or should anyway
Lighter colors tend to make spaces seem larger. Think pale shades of blue, green yellow, tan. Also white.

I too would paint the upper cabinets a light color, white, grey, cream, soft sage green.... one current trend is to paint the lower cabinets a darker shade of the same color. I would get rid of the dark trim at the ceiling or paint it the color of the ceiling,
I agree, concentrate on your decluttering and finding a home for everything. You could also use undercabinent mounts to get some off the countertop. Adding organizers in the cabinets will help increase storage.
