Hi James. Arbor Vitae's would give you a lot of privacy. They grow slim and very tall. My backyard has Arbor Vitae's around the perimeter and we love it. Be sure to leave room for your lawn mower to get behind them.
I know that feeling. Try planting some Leland cypress or red bud, they both grow really fast. Don’t plant them too close together because both types of hedge trees get pretty large. If you put up a 6’ wooden fence, you might have wished you’d put up an 8’ later on. Fences do need maintenance. Trees just need rain and sun.

James, A lot colder in Canada than here. Your best bet is to contact one of your local nurseries and see what they suggest.
They do make plastic slats that go through chain link fence. Home depot and Lowes carry that kind of thing.

I would go with a vinyl fence, no maintenance and plenty of privacy.
