I would be installing crown molding in my bedrooms and bathrooms by myself. No helpers here! Thinking about foam crown molding as it would hold up better in the bathrooms and it is lighter to hold. Should I paint the molding before installing? What else can I use that's foam and might work as molding? Can regular base molding work?

you can use anything you want for crown molding. As long as you like it, that's all that matters
I did paint my crown molding before I installed it but I did have to go back and fill nail holes, do touch up and chalk along the ceiling. I have regular wood crown molding in my bathroom and it has held up fine to moisture. As far as using base molding--it would go on the wall more like a border. Crown molding is installed at an angle. I recently used a thinner base molding in my farm house style kitchen rather than crown molding and it looks great.
You can use anything you like - if it looks good to you then it works! Yes, I would paint first, with the correct paint formula. Let it dry thoroughly before installing. Yoi will still need to do touch up, but it should need to be a big deal. Here are some examples of foam crown molding.
