If you have no expertise in this area hire someone to lay out. Landscaping design is a gift improved by extensive education. I am not a LA but I have wasted a lot of money DIY in this space

I agree with the professional landscape suggestion. This space is huge and unless you have a lot to spend may need to be sectioned off and done incrementally. Wow! Good luck
Oklahoma City here lol. Have you lived in Oklahoma long and familiar with the weather/climate? Before I did anything I would call OkieDig to come out and trace where all your underground utility lines are in the yard. We had a ten foot utility easement that ran the whole width of our backyard from the rear fence line towards the house. The cable lines were even crisscrossed outside the easement directly across the center of the yard. If that is not a problem then you can start your plan. Plan any hardscapes first like a deck, pool, or pergola, even if you won't be putting them in for awhile.
We have just moved to Houston. Sooo different weather wise from Tulsa. I donot even know where to start with selecting trees/flowers/bushes etc
Have a landscaping company come and assess your yard. If you have a video cam, point it out onto your yard do a 24 hour recording. This way you can see what’s in the sun and what’s shaded....and what time that happens. When you go to plant trees, look up on line to to see how big that tree is when it’s fully mature...the roots of a tree are 3 times of the canopy. Space the trees out. If I rember correctly pecan trees grow well in Texas.
