As for the plants.... talk with a LOCAL nursery... they will know which ones do best in your climate and soil conditions
You could turn the pasture into a "destinations" area.... with a fire pit as one destination, a picnic table as a second area, an area with a gazebo, or pergola or swing.... different places to just go and ... be.
Tina, if you have a local nursery ask them for ideas on plants. In my opinion its best to use plants that are native to your area. There are many different types of vines that grow fast and will cover everything, so you are best to do some research online. If you could figure out how to create a path that has horseshoe stepping stones, either stepping stones you create yourself that has a stencil of horse shoes or the shape of a horse shoe. Or maybe using some of the shoes that Cayenne wore, press into cement to create some of the path stones.
I think you have an amazing idea to honor your beloved horse. I don't blame you on not wanting plastic and rocks, that would be depressing. You want a place that's appealing for you and everyone else.
I'm a horse lover so I understand what you want. I also love plants but don't want to give you ideas because I don't know what kind would grow for you at that altitude.
Look for things like colorful plants/bushes that will bring beauty to this area and your heart. Someday you will be able to look back and smile when you think of your beloved Cayenne but until then hold his memory close to your heart.
With all the manure you might have, unless you’ve cleared it lol out, crops would grow amazingly. I used donkey manure on my rose bushes and they are thriving in this hot Texas sun
