Grill it! Slice horizontally into 1/2" thick pieces, brush with some olive oil, season with salt and pepper and place on the cool side of the grill. Will also work in a saute pan on top of the stove. Another great way is roasted on a sheet pan in the oven, (typically i do with other vegetables, zucchini, peppers, carrots, etc.), cut up into bite size pieces, toss with olive oil, salt, pepper, garlic or seasonings of choice and roast in a 425° oven for 20 minutes or so. And there is always eggplant parmigiano!
Set your oven to 350 and get out a sheet pan or something that accommodate s the size of the eggplant. Slice the eggplant vertically down the middle, score the flesh with a sharp knife. Season with herbs that you love and drizzle olive oil over the top. Turn the cut side down on the pan, pop it into the oven for about 35-40 minutes until fork tender. Yum, easy, hardly any clean up.
Good morning. Thank you so much. I really enjoy reading Hometalk. You all always help out when I need you. I only purchased one eggplant to try it. Now that all of you have given me ways to prepare it, I'll be buying them at least twice a week now, trying different ways to prepare it.
