When are green beans ready to be picked?
depending on you location, you can hang in a dry area that has good air circulation in your home, or you can dehydrate in a microwave -- there are lots of tutorials -- it's easy to do -- a paper towel on the turntable; a few leaves -- w/o stems and not touching each other. Start with 2 seconds, open door and touch the leaves -- if they are not 'crispy', use a new paper towel for 2 more seconds -- nearly all herbs can be dried this way but it's a VERY VERY quick process and they will burn in an split second!
I pick the Sage leaves, wrap them up in a small paper towel packet, put the packet in a plastic sandwich baggie with a label, and the Sage will be almost fresh for several years. Got this method from Marth Stewart!
i forgot to mention that I freeze the Sage leaves after preparing them in their packets!

If you have a dehydrator setting on your oven, place clean leaves on a rack and leave in oven 12-24 hours. Otherwise, dry on rack in 100 degree oven, or on screens, set in sun.
