Old school....write about what they did during summer vacation or have them create a small DIY on their on about something they did and do a show and tell! Some may already have something if they went to VBS or camp!
Mosaic of their name. Either with pollyfiller and glass beads or pre cut bits of paper if younger age. Collage of things that represent them. Get everyone collecting magazines for that one.
Make a journal to keep for the entire year. Design the cover using previous comments. Journal pages can be like a diary, fun ideas learned in class, thoughts, weather extremes, holidays, memories. You are the expert on this being a teacher. I don't know the age of your students. Books read that are loved, or not! Aspirations. Party comments. Report card results. Assemblies written up. Artwork taped in. Have a few min devoted to journal each week.
Focus on building community. Depending on the age of your students (I teach 6th grade, which is a combined middle school, so there are students from two elementary schools.) do activities that will help them get to know each other and you. Get to Know you Carousel, Two Truths and a Lie, Stand up-Sit down, Interview a Partner, and many others will help get students over first day jitters.
If you have access to their photos, have them glue them (school pics are always just their heads)on paper and draw the body and different things they like. They can draw their siblings, pets, musical instruments. Display their pictures so everyone can see what they are like. Bonus. Helps you get to know them faster this way.
I love "I am" poems. They could decorate them after. You learn so much about the kids with them.

What grade do you teach? Some activities will be more/less suitable for younger or older students.
