Plant more grass or use ground cover or use mulch.
Once you have the weeds out once, put down preen Weed preventer in the gardens. It really does help and there is nothing in it that will harm the plants or the environment, any seeds you plant will germinate. There are now a number of long handled tools that will help you to not have to bend or get down on your hands and knees. I got a long handled weeder and it is great for popping out the creeping Charlie that is always showing up on the edges of the garden. You can use one of those grabbers to get the weed once you have dug out the weed with the weeder. I hope this helps you get your garden weeded a bit easier.
Just like the hand weeder, with the W shaped end to get under the roots, just has about a three to four foot handle so that you can stand and weed. It makes it real easy to pop them out of the soil. I have seen them at Menards, Home Depot, Lowes and Fleet Farm around here and aren't really expensive either. I can't remember where I got mine, I think it was Menards.
It might be time to shrink the size of your beds and if you do this then build the soil up a little higher and perhaps use a nice chipped mulch to keep the weeds at a distance. I discovered planting closer together also keep the weeds to a minimum.
