How do I undo interior sheetrock arches?

When the house was built 30 years ago, the builders cut "arches" in 2 doorways in the kitchen in the sheetrock. They did not do a good job, and the arches aren't really arched! I want to frame them in like the other doorways, but I am unsure how to do this as a DIY'er!!!!

Oh dear, I personally happen to like arches, but they need to be done well and fit with the style of the house and not a sloppy afterthought. See if this helps you out!
