You can cover your whole island top, or just do an extension with the butcher block.

If your island is flat, great. You just need to build an overlapping island cover with a two foot overhang on one side. Build a frame of 2x4s for strength. The glue or nails will support the seating area. Best wishes ☺️

It’s probaly easier to just replace the whole top with the butcher block just add the measurements to the area you want to extend. Ikea has some inexpensive options but ck with the big box stores also. If you are installing it yourself the cost should not be bad.
