Top of what to be pine? It is a very soft wood that dents easily.
You can use a product called waterlox to seal wood countertops. I have walnut in a bathroom and for my kitchen table that is unsealed and it stays nice without being sealed. But I don't let water sit on it. I "seal" it with wax about every 6 months to bring back it's luster.
I would use a bar top epoxy finish.
