You don't. It is a plant. It grows. What you can do is take a sharp shovel and cut off a chunk and dispose to keep it the size you want. Or offer your discards to friends and neighbors. It is a very forgiving plant and will easily establish itself even in poor soil.
I agree, you don't. Bamboo is almost impossible to get rid of without digging up everything. Good Luck!

There are generally two types of bamboo running and clumping. Clumping bamboo grows by adding very short rhizomes and spreds slowly thus clumping. Running bamboo sends our long to very long rhizomes which are very invasive thus running.
