The easiest (cheapest!) way to change kitchen cabinets: PAINT.
You can do it the traditional way... take off ALL hinges and handles, label doors and where they should go. Prime! Paint with two coats. (Note: painting over hardware indicates an amateur job!)
If you want, get new hardware --- that is always nice --- and you can buy in bulk from Home Depot/Lowes.

Kitchen cabinets are either built on site or installed after being built. The installed ones are screwed together at the face frames and to the wall and at the top and bottom. Unscrew and lift down.
Built on site cabinets are basically shelves with doors and these need to be demo-ed.
Install new pre-fab cabinets by marking a level line for the wall cabinets, add a temporary ledger board to support them and screw to the wall. Line up and secure face frames to the previous cabinet as you go so they are seemless.
After wall cabinets are finished, place base cabinets in their respective positions, shim to level and screw to wall and adjoining cabinets.
Make sure you know where your wall studs are before you begin.
Hi. Consider re-staining them. Stains have come a long way and there are all sorts of colors in regular and gel stains. There are also polyurethanes that have stain in them, so a good cleaning of the cabinets and light sanding is all that's needed to add a coat or two. Happy DIY'ing!
