Depending on your area, during the dormant season (winter-early spring) before it sets buds.
I was just going to say now if your sap is down. Not sure what zone you are in but once it starts turning cold you are good to go.
I live in Virginia and prune my apple trees in February before they break dormancy. I always prune when there are no leaves on the trees so I can see the shape and cut any water sprouts (those twig things that stick straight up from the branch) and trim back extra branches to get that nice "ladder" shape that produces the best apples.
