There’s a hundred ideas on this. I’m guessing that your time is worth a lot and you’re not wanting to have to repair or refinish this in 2 years. Therefore, I’ll help you sort through the on-line photos with this:
...what height are your bar stools? The counter needs to be at least 12” higher.
...the counter top is the most important part for two reasons: durability/scrubbable and it needs to overhang on the bar stool side at least 15-18”.
Granite/marble slabs cannot cantilever that far and require a 3/4” plywood substrate.
If you want electrical outlets for a blender or tiki twinkle lights, then I can advise you on how to install a GFCI Outlet.
You could use bookcases the height of bar you want. Bank 2 or more together to the desired length. Screw together and add a nice front to the back of bookcases. The shelves give you instant storage for the back of bar. have a countertop made with overhangs that fit your needs.
