You can remove the old veneer and replace it with new .Its a lot of work .Can be pricey
I would put a new top on it and stain it to match. It is easier than putting on new veneer.
What about paint the veneer.
Back in the day that was a form of laminate that was chemically photographed with a woodgrain. Over time it did wear away. Blonde was a favorite finish. You can glue sheet of birch veneer over the existing veneer stain and seal. The birch woodgrain is similar. Or you can get 1/4" birch plywood and glue it over the old stain and seal. Cheaper than actual veneer.

Blonde finishes do not age well. They're usually extremely thin veneer that will sand away to nothing when you're trying to remove the finish. Painting them is the best way to save them.
