Clear silicone caulk might work.
Two part epoxy adhesive.
If you get an epoxy fill kit they generally come with color match options. That way you can match your countertop color and the epoxy used to fill the seam because it will show a little unless you use a vacuum sealing machine that pulls the pieces together (like installers use).
Check with your local hardware store to get the correct product for your quartz.
