Try cleaning with a light sanding then oil well

I agree with Kathy here, a light sanding should do the trick and then you can use a butcher block oil if you plan to continue using it as a cutting board.
They can be sanded with an electric sander.

Sand them sown
sand them with a very coarse sandpaper. gradually use sandpaper that is more and more fine until you get them to the appearance that you like and then seal them to protect them.
