Drywall is still the cheapest, but since a bathroom , use green board. Water resistant drywall. Just a few dollars more.

Bead board is lighter and easy to install. However, seams may need a wooden grid to cover them to dress them up.

You need to do whatever your local building code allows. Some may allow 3/4 inch tongue and groove instead of drywall, some may not. Bead board panels are probably not allowed as they would not meet the fire safety requirement. You could redo the drywall and not finish it (except for taping and mudding the seams) and then cover with bead board panels if that is the look you are after.
