Where you live will determine how to care for them. In the north, you can dig them up and dry them out-store in a cool place. In the south, you don't need to do anything except cut back and mulch.
Elephant ears will die back in the winter. Cover the soil where the korns (roots) are with a deep layer of mulch. They will regrow in the spring when it warms.
I only have knowledge in Central Florida. Not sure where you live but here in FL, you trim and forget except for covering for the occasional frost.
