Why is pound cake top very hard and crumble>?
the cake itself is very moist and very good but the top is very hard and crumble why? followed the recipe to the letter.

If a cake is baked on a rack too high, then the top of the cake will get more heat than the inside, sides, or bottom. This could result in the top drying out before the inside is fully baked.

Flipturn makes a lot sense, if the cake is too high in the oven,-where it is hottest, the top of the cake will be overcooked and the lower portions will be ok.
Carolyn, You might have left it in too long, it cooks for five minutes after you take it out of the oven. Try foil next time the last 15 minutes. Aloha.
