You could try peel and stick tiles, they have a good assortment of them at Amazon. you might want to put them on accent walls to control costs. Maybe hang large pictures with command strips.
Maybe temporary wallpaper? You can get a lot of fun. modern colours and patterns from a variety of retailers!
be careful with sticking anything to the paneling. It could peel the paper or vinyl off that paneling
Maybe hang a tapestry or fabric over the all.
