I usually recommend just painting the open ceiling, duct work, wires, pipes etc. black or dark blue so it disappears. Add great non fluorescent lights, light walls. Full access and room will look taller.
Rather than installing a false ceiling, paint everything a dark brown or black. (I prefer dark brown) It will hide everything up there and give it a cohesive look. You can see this look in many upscale restraunts.
I'd paint it, but you could do drywall if you didn't want to see the beams.
