Use a jig saw, circular saw, or oscillating tool to cut off the rounded edge. Cover the cut with wood trim. Nail and glue it. Fill nail holes with putty and sand. Paint or stain to match your kitchen. You may also need to caulk the joint between the cut and new trim.
I guess you could cut off the round edge and reface it with wood.
No problem. Before you make your cut, use painters tape to cover the length of the cut so you don't chip the formica. Also use a utility knife to score the cut line before you cut it to give you a cleaner cut.
