Hi Shawn, you could use contact paper. They make some pretty designs now. Painting it is always an idea.
Your right !!!! That is a great idea should I sand it down first ?then would you recommend putting down some kind sticky adesive then laying the contact paper down?
Make sure the counters are clean and smooth and the contact paper should stick without additional adhesives. Also, it will be easier to remove if you ever decide to do something different.

I’ve painted my counters. First I cleaned, filled in nicks with wood putty and then used bonding primer. I found bonding primer at Sherwin Williams. Let the bonding primer cure before painting. I used front door paint. Paint in thin layers and let each layer cure before sanding with a fine grit sandpaper.
My painted counters looked great for years. I did make sure to always use a cutting board and to wipe up any water.
Oh boy go into your local box store like Lowe’s and Home Depot. There are great kits for a couple hundred dollars to redo your counter tops that are absolutely amazing! Looks like stone!
I purchase paper from Amazon that looks like granite and put on my kitchen and my son countertop and it has adhesive backing, just remember to cut on cutting board but it is beautiful and easily done. I had it on for 3 years and it does not peel off unless you take it off

Not sure how you define inexpensive, but for me $200 would be out of the question. 2 weeks after i moved into my house my son passed away working out of state, so the money I was going to use to do my floors, back yard and countertops had to go towards those expenses. After a time I noticed I had big knicks in my counter like yours. So i looked into
Gianni paint for counter tops. It was around $80. I even had to call them when i got stuck at one point and Tim was AMAZING! He went above and beyond to help me. The counter came out beautifully and its held up very well and even covered those knicks too😊
