Depends on the surface. Check for cleaners made for the surface (like stainless steel cleaners). Most mild cleaners/degreasers should work anywhere.
I wipe mine down daily with a damp microfiber cloth, If you have a grease build up then GP66 or Fuller degreaser. Both are safe for kitchen.

Hot water and Dawn dish soap is great for cutting grease. Keep at it until clean this time and then use this mixture each time you use the stove. Keeping the stove clean as you go works best so you don't have a massive cleaning job later.
Put cleaning towels over surface and the soak with ammonia. Cover with plastic wrap to hold in the fumes and keep moist go away for an hour. Come back and just wipe up. Works in oven area really well and just lay on racks on bottom of oven. Walls will wipe down easily.
I clean my stove top and microwave once a day. I wash stove top and microwave front with dawn and water and then spray with vinegar and water and then wipe with a microfiber cloth. Takes all of 2 minutes or less and my stove and microwave look brand new.
