Shari on Aug 19, 2014You can grate it and put it in the freezer for later use. When they are this big, they don't taste as good when breaded & fried. You can also use them for fritters, too; lots of recipes available online.Helpful Reply

Liliana Wells on Aug 20, 2014It's zucchini. You can grate it, freeze in small portions and add to a meatloaf mixture to keep it moist, especially if you use ground turkey for the meat. You can also make zucchini lasagna, zucchini bread, deep fried in a beer batter, sliced lengthwise sprinkled with olive oik, salt and pepper and grilled outside, tons of uses. Cooks.com is a good website if you don't what to do with an ingredient.Helpful Reply

Liliana Wells on Aug 20, 2014When it's young you don't have to peel it. But this looks a little older and the skin maybe tough. Bite into it. If the skin is tough, you may want to peel it. Let us know what you did with it.Helpful Reply

Rosanna Utter on Aug 21, 2014I fry my zucchini with yellow zucchini, onions, and potatoes in olive oil. Yum!! Also you can omit the potatoes, and add tomatoes, ground turkey, chicken, or beef. Spice accordingly. Boil up some wheat pasta of your choice and when all is done, mix and voila...you have a delicious healthy casserole. : )))Helpful Reply

Traceycater on Aug 25, 2014We finally made bread from this "squash", it was really different in taste, not quite like banana or zucchini, but, hey we tried. Giving it to some friends that are from the tropics that they say is used for all different uses. Glad that they will be able to enjoy it and not have it go to waste. Thanks for everyone's input.Helpful Reply

Traceycater on Jan 29, 2015Thanks for all the ideas and some new postings since it has been resolved. We ended up giving it to a family from another culture and they made it in a stir-fry and asked if we had more! Didn't find any more as of the first one we found back in Aug of 2014. Thank-you again for the replies!Helpful Reply

Annie Doherty on Jul 06, 2016Squash or courgette delicious as fritters cut into rounds egg wash and batter mix or crumbs and deep fry, serve with a home made tomato sauce, pesto or aliol. You can cut in half scoop out the flesh cook with onion, garlic, tomato, chorizo or similar or tunam bake in the oven for 25 mins then top with grated cheese for a further 5 minutes. I do when making cakes great half a zucchini and a carrot with cinnamon and honey or molasses and the cakes mix is beautifully light and tasty and no one has guessed it's zucchini. I hope you enjoy cooking with them.Helpful Reply
