Semi gloss in a latex is best. I know some use chalk paint and wax but I've heard the wax is a pain with upkeep
Check with Sherwin Williams for a specific cabinet paint. Make sure they know it is for knotty pine because the knots will bleed through unless sealed properly.
If I had to paint a kitchen again I’d use Fusion mineral paint. It holds up so well to wear and tear!
If you think you are going to get bleed through before you paint use a clear sealer first. Then you should prime and use an acrylic latex paint in an enamel finish. This is the paint Sherwin Williams sells for cabinets. Benjamin Moore has a cabinet paint too, and Behr.
