I bought brick paneling to use as a backsplash. It is grey and white. What should I use to seal it that won't yellow? I want a coating that I can wash if needed

polyurethane comes in matte finish, satin or glossy. Paint on and wash away. Use two coats.
Three coats of a water based polyurethane. Does not yellow. Oil based has a yellow cast and will yellow over time.
