I would NOT trim tomato plants at the top of the plant. I only trim at the bottom and remove the "suckers" that will only produce foliage and no tomatoes. Trimming them at the top may put the plant into shock and they may struggle after any pruning at the top.

It depends on the type of tomato some produce fruit on the new growth others do not.
I never trim mine because they get too tall. If need be I use stakes that are taller than the branches and gently tie them to keep them more upright. I always have to do this with my potted tomatoes. My garden tomatoes, they go over the tallest cages around, but the intertwine and form a canopy with my other tomato plants and never have branches break from the weight of the growing tomatoes.
