You can buy it in 4x8' sheets but that's usually a knotty pine look, which could be cut to any height and painted after installing baseboard and a cap rail.

Beadboard comes in different styles, you can purchase it in 8 ft lengths and cut to size what you need for a more natural look, or you can buy bead board panels that can be cut to any size but look a little more prefabricated. I did the real beadboard in my bathroom half way up the walls. The boards are tongue and groove and fit together creating a seam that also grips the next board. We applied a ribbon of an adhesive, like liquid nails or power grab and used small brad nails too. The small nails can be counter sunk and a small amount of wood filler on your finger can cover the nail head. I primed and painted mine. Added a top "cap" to finish the edge.
